Head chef / Assistant Manager – NIC Service Group (August 2023 – March 2024)
- Whilst fulfilling the day-to-day responsibilities of a chef, my role at NIC was also to manage a team and expedite all administrative duties for the business. We provided a service for up to 2000+ people a day which improved my time management skills as well as attention to detail.
- This role also provided me with the unique experience of working within corporate hospitality rather than a restaurant or bar setting. The type of menu we delivered was a mixture of fresh and pre-prepared food.
- Whilst maintaining the standards in the kitchen it was also my responsibility to uphold my position as assistant manager. This meant communicating with our client, Tesco’s, to ensure we delivered and where possible exceeded expectations.
- I had key responsibilities of managing the kitchen's finances, delivering PDPs to team members, stock management, rota management, risk assessments, allergy compliance and all health and safety compliance.
Deputy Manager – Shepherd Neame (May 2022 – August 2023)
- My duty was to lead a team and assist the General manager in running the business. I advise on rota’s, events such as weddings and parties, P&L reports, labour hours, budgets, communication with the property team and the general necessities that are needed to run a successful business.
- As Deputy Manager, I was also responsible for the training of fresh staff members which included BOH training i.e., Food safety and preparation as well as FOH such as barista skills, cask management, keg storage, and wine training.
- I attended many courses whilst with Shepherd Neame and cellar management became a passion of mine. I became the designated trainer for all cellar duties, especially the training of cask ales. Wine training also became something that I took pride in by training staff on the flavours, scents and differences in grapes used to produce the wines we sold.
- Shepherd Neame offered a completely fresh menu and during my position I gained even more knowledge on BOH such as the use of fryers, Merry chefs, salamander grills and a pizza oven.
- This location also had an event venue license and during my time, we held events inclusive of birthday parties, Christmas parties and weddings. This was a brand-new experience for me; however, it helped me expand my knowledge on event management and venue licenses such as a TENs (Temporary Event Notice).
- During my time with Shepherd Neame I was also afforded the opportunity to run a separate site independently for 2 months where I increased food sales by 11% and wet sales by 16% with target promotions inclusive of the 2022 FIFA world cup.
Duty Manager / Team Leader – Whitbread (August 2019 – March 2022)
- Over-seeing business operations whilst leading a team of 12, responsible for all services provided to clientele ranging from consumer goods to customer experience to business staff resourcing and accounting.
- This means that I managed money and have a good understanding of the financial system used. During this role I learnt how to lead a team to success and how to make sure that all staff and customers had a pleasant experience. I also developed my skills of dealing with complaints and confrontations.
- This position gave me brand new experiences on how a business can be run. From understanding the running of the bar such as stock counting and line cleaning to understanding the laws and legislation that we had to follow as a business.
- During this role I started to ensure I was cross trained in every area of the business from FOH to BOH.
