I have 35 years experience as a chef, 22 of those as a head chef. I have worked my way up through my profession and have worked at both 1 and 2 rosette establishments. In my current role as head chef at Orton Hall Hotel I have successfully led my brigade to maintain 1 rosette standard for the duration of my time in the role.
I am also proud to be a Master Craftsman in the Craft Guild of Chefs. I am classically trained and use that training on a daily basis to develop modern styles of food both alongside other members of the brigade and also individually in order to set the tone of a new menu or re-imagine a well known dish.
