Progressed from supervisor to restaurant manager & drinks buyer within one year. Ran day-to-day operations at Dory's while leading the wine & drinks programme for both sites. Retained on a consultancy basis to help set up and run Angela's new bar venue, after Dory's closure was announced. Oversaw the creation of a new cocktail menu with a focus on British spirits, liqueurs & homemade seasonal drinks.

• Ran daily service in a high-turnover restaurant, staffing and problem-solving on the floor in real time
• Recruited and trained front of house staff, including running group wine tastings
• Wrote the wine, drinks and specials menus for both restaurants, with sustainability built in from sourcing to waste
• Managed supplier relationships and stock allocation across two sites, keeping both reliably supplied
• Handled stock control, ordering and pricing, working from sales data rather than guesswork
• Developed seasonal drinks and low-waste infusions, built around using up ingredients to prevent waste

• Source and liaise directly with producers and importers to bring them on board
• Coordinate venues, logistics and on-the-day operations across multiple sites

• Organise spin-off events around the festival - talks, tastings and collaborations with local venues
