I am currently working as a chef manager in a care home and I am looking for opportunity to progress in my career further. I worked previously as a kitchen assistant and progressed my way up to cook, then deputy chef and lastly to chef manager and I have been the Team leader for the last 14 years.
During these years I have been not only providing the high quality meals for residents and staff, but also building up a relationship with the residents and their relatives, so I can provide the best quality food and meals possible, suitable for their dietary needs and requirements to make sure they get all the nutrients they need.
I have Food and Safety Level 3, Nutrition and Dehydration and IDDS (International Dysphagia Diet Standardisation Initiative) as the most relevant qualification. All my trainings such as COSHH, Manual handling, Food and safety and Fire safety are up to date and I make sure that I adhere to the company’s regulations and policies.
I am hard working and highly motivated individual with excellent leadership and management skills, able to work independently as well as a team player with strong communication and interpersonal skills. I have very good timekeeping and able to work under pressure in fast-paced environment, prioritising workload and managing responsibilities. I am also an advocate in improving our services by collecting feedbacks from residents, their relatives and colleagues.
Part of my duties and responsibilities as a chef manager are not only cooking for residents and staff high quality meals, but also building up a relationship with the residents and their relatives, so I can provide the best quality food and meals possible, suitable for their dietary needs and requirements to make sure they get all the nutrients they need.
Our Support Services provided all the necessary trainings - Manual handling
• Level 2 Fire Safety
• Emergency First Aid
• Health and safety level 2 - including COSHH, Risk assessment and legal responsibilities
• Infection and prevention control level 2; also Display Screen equipment training. I have Food safety level 3, Nutrition and Dehydration and IDDSI(International Dysphagia Diet Standardisation Initiative) as the most relevant industry certifications. All my trainings very provided by Bupa Head office or different homes owned by the company, University Level 2 Practical skills in Food preparation, also Highfield e-learning and Bupa e-learning.
I am using the set menu created and provided by the company, but I have been responsible for updating it on daily basis due to the resident needs and dietary restrictions or their wishes/choices. Every resident is provided with the menu choice, but can ask for something different that's not on menu should they wish to.
Monthly, we receive MUST scores and Food preference forms about every resident, which includes their regular weigh, allergies and dietary restrictions, as they can change quickly. We work as a team with carers and managers to create a meal plan to satisfy the customers, making sure it will meet the requirements. We can provide all texture modified diets set by IDDSI - liquidised, puréed, minced and moist, soft & bite sized, regular.
I am a trainee trainer and making sure all food handling staff has up to date food hygiene training to develop a high performing kitchen team and delivering exceptional food quality and high standards.
I control the quality and consistency of dishes by following the recipes provided by head office, controlling the temperatures in a food trolleys making sure the food is safe to go in. We taste the food before it goes out to the residents and daily collecting feedbacks from residents and their relatives after meal times. By talking to the residents and management I try to create new dishes for residents, which may trigger positive memories for them from their past when they were younger.
