A senior quality assurance personnel with 10-year-work experience in food manufacturing industry involving receiving, inspection and analysis of raw and packaging materials, process monitoring and control, sanitation process control, evaluation and quality control of finished product, auditing, reporting and technical functions; holding a diploma for Bachelor of Science in Food Technology and a Civil Service Examination passer.
Identifies thru screening of alternative materials suitable for production use
Conducts physico-chemical validation of raw materials and packaging materials and finished products
Operates and maintains laboratory equipment such as but not limited to texture analyzer, pH meter, moisture analyzer, titration apparatus, laboratory oven, incubator, digital thermometer, refractometer and chromameter.
Monitors in-line production especially at critical control points such as but not limited to precise and exact weight of food additives, bread improvers; correct and proper order of mixing ingredients; correct time and temperature setting of equipment such as: mixers, proofer, oven; correct setting of mechanical blades of slicing machines; efficiency of metal detector device; product integrity at packaging and bread storage areas.
Assists in troubleshooting on any deviations found in machine process, product formulations and process lines that directly affect the quality of finished products and recommend necessary adjustments or corrections
Conducts in line batch and machine testing of received materials prior approval for production use
Performs shelf life monitoring and bread scoring of finished products
Assist to conduct microbiological analysis of environmental, raw materials and packaging materials and finished products
Performs and conducts cGMP and SSOP audit in Toll Manufacturing to ensure that proper and consistent implementation of GMP and sanitation program
Conducts accreditation, evaluation and re -evaluation of all suppliers
