Hello,
my name is Lauren Doggett and I am very interested in your Pastry Chef position. I have worked on the industry for 10 years and managing for 6. I am currently running the Pastry Department for 2 very popular restaurants in Denver. Both of these restaurants are owned by a James Beard Award winner. I am in the process or relocating back to the Bay Area. I am specially skilled in allergy friendly desserts as well.
I have spent my career pursuing the best if the best. I worked for Thomas Keller for 2 years and Eleven Madison Park for a year. I truly strive for perfection. I create desserts that are interesting and exciting. I have Celiac disease so I have a better chemical understanding which is very beneficial to me.
