My name is Romain Audrerie. I am a London-based wine and beverage strategist with fifteen years of senior leadership experience across luxury hospitality, and I am writing to introduce myself as I make a considered move toward a permanent, salaried position.
My background sits at the highest end of the on-trade: Opening Head Sommelier at Chiltern Firehouse, then Global Wine Director for André Balazs Properties across Chateau Marmont, the Mercer Hotel and Sunset Beach. Since founding De Bonneval in 2022, I have worked as a consultant across an exceptional range of venues — Tramp, KOKO, Ladbroke Hall, The Sloane Club, The Twenty Two, The Wilde in Milan, and most recently as Consultant Beverage Director for Haus Da Lat, Vietnam's first private members' club. I have also been appointed wine consultant for Latine Mayfair, opening at Lancashire Court on New Bond Street later this year.
