Prepare and produce various types of bread, particularly focaccia and artisan bread.

Handle the entire dough-making process, including mixing, kneading, fermentation, proofing, and baking.

Understand and apply cold fermentation techniques.

Experience with sourdough is an advantage.

Ensure consistency in product quality, texture, taste, and presentation.

Operate and maintain bakery equipment, including ovens and other baking tools.

Prepare ingredients and monitor daily production requirements and stock availability.

Maintain cleanliness, sanitation, and food safety standards throughout the production process.

Perform quality checks on all bakery products before serving or selling.

Coordinate with the kitchen team to ensure smooth daily operations.

Qualifications

Minimum education of Senior High School (SMA/SMK), preferably from a Culinary or Hospitality background.

Minimum 1–2 years of experience as a Baker, preferably in an artisan bakery or Italian restaurant.

Hands-on experience in making focaccia, artisan bread, pizza dough, and other yeast-based products.

Good understanding of dough preparation, fermentation, proofing, and baking techniques.

Familiarity with Italian bakery ingredients, recipes, and production methods.

Ability to follow standardized recipes and maintain consistent product quality.

Knowledge of food safety, kitchen hygiene, and proper ingredient storage.

Detail-oriented, disciplined, responsible, and able to work independently.

Good teamwork and communication skills.

Willing to work early morning shifts, including weekends and public holidays, according to the bakery's operational schedule.

Preferred Skills (Plus Points)

Experience with sourdough and long fermentation techniques.

Knowledge of ciabatta, baguette, pizza, and other European-style breads.

Experience in fresh pasta production.

Ability to manage daily production planning and ingredient usage.
