Been cooking my whole life, I can attribute it to my mother traveling and trying to recreat recipes at home. It's tough grueling work, but I enjoy the fast paced stress and making a kitchen run smoothly in the chaos is one of my favorite feelings. Been cooking now for almost 15 years from small diner to upscale restaurants.
Always believed in 2 things as a cook one was taught to me by a chef. The 6 P's of prepping, proper, preparations, prevents, piss, poor, performance. It's never failed whenever your prepared it's very hard to fail.
The other is every cook should have been a dishwasher or completely willing to do their own dishes as a cook. It will always help build respect for the people cleaning up after us cooks.
Can pick up kitchens menu quickly and become one of stronger cooks in most kitchens. Have done ordering, schedules, special menues ie valentines menue or Easter menues, have cooked buffet, large scale college setting, to quick small dinner turn and burn. Can prep and stand for hours. Willing to help others when necessary to smooth rushes.
