As my resume (available upon request) attests, I have over 20 years front-of-the-house and (when needed) managerial experience in the hospitality industry - from the old Cafe Nola and Zanzibar Blue, to more recently the Starr Organization, Garces Group, the (no longer existent) The Bercy, and the Fitler Club. I also have 10+ years management and training-of-employees experience in other non-hospitality related establishments as well.
While I've never attended a culinary school (my alma mater was the Art Institute of Philadelphia), my knowledge of food, wine, and sprits, … and of how to manage people and scenarios under pressure, … came from the 20+ years within the restaurant world. So, I guess that would be my most relevant education in this scenario.
