● Team lead and primary cook for both plated as well as buffet style functions of 20-100+ person events.
● Creation of new menu items as well as creating recipes and ensuring proper plating and presentation of menu items.
● Daily shift forecasting to prevent waste and to set task and prep lists.
● Training and Management of staff to ensure efficiency, quality of work, and good teamwork.
● Taking monthly inventory as well as making order lists of all needed stock. As well as accepting, counting, and restocking said orders.
● Working on line in all roles as needed, as well as cooking and preparing dishes for various buffet and plated banquet functions.
● Maintaining composure during times of high volume and acting as a team leader.
● Ensuring the maintenance of proper culinary department cleanliness as well as proper date labeling and safe storage of food.
● Dishwashing, cleaning and prep work in addition to cooking as needed.
● Creation of Opening/Closing task lists for kitchen staff as well as participating in both opening and closing as needed.
● Maintaining properties Health and Safety Program.
● Updating and writing new safe work practices, as well as hazard assessments,
and Emergency procedures.
● Maintaining safety stats to identify trends and to correct potential hazards before an incident can occur.
● Leading and attending Health and Safety meetings and projects.
● Leading and taking part in Incident and workplace investigations.
● Internal and External Auditing for COR (Certificate of Recognition as required for Partnership for Injury Reduction Program)
