8 years of experience in multi rosette and Michelin star kitchens to the level of senior sous. Alfred then joined the Waitrose cookery school in 2017 as a chef tutor where he taught and developed cookery school classes for over 3 years. Joining B-together as development chef - developing, writing and costing restaurant, nursery, grab & go and private members menus.
Along with developing an early years cookery school from concept to profit centre, writing over 200 recipes and 100 classes for the school. Promoted to executive chef, successfully reducing labour cost and improving SPH, compliance, P&L, food GP’s, restaurant and overall food margins, building staff training documentation and implementing menus. Alfred now works as a food consultant, working for Dec’s Kitchen as head of training and development.
Working with clients in a multitude of food areas, from food delivery brands to the care home space.
