Hello, my name is Kimberley Thong and I am a graduate from Iowa State University with a B.S Biological Systems Engineering.
For the past 3 years, I have been working as a Research Associate for an ingredients company based in Missouri, USA. In that position, I was running functionality testing on soybeans such as viscosity, texture, emulsion, water and oil binding capacity at bench scale using flour, concentrate and isolate of soy. With those results, I have been working closely with sensory and food scientists to come up with potential food applications using the data analyzed with the functionality testing.
Moreover, I have been responsible for writing Standard Operating Procedures (SOP). In addition, I have experience in ingredients processing at both bench and pilot scale.
