Director of Operations, BIMBO BAKERIES, Houston & San Antonio, TX 2021 – Present
Report directly to Sr. Director of Operations, supervise four direct reports and 335 indirect reports. Direct operations for two large wholesale baking facilities with annual production value of $247M from four production lines two bread and two bun line that produce 2.1 million units per week. Accountable for all aspects of plant including receiving, production, sanitation, food safety, maintenance, shipping, safety, quality and all team members in both locations.
❑ Developed Power BI tools with bakery PFM support to facilitate decision making in Houston and San
Antonio bakeries, currently in roll out process into Central South bakeries.
❑ Started as Director of Operations in 2021 with team member turnover rate of 28% in Houston,
cultivated teamwork and a “we can do this” team mindset; currently our turnover rate is down to 11%
as of April 2023
❑ Took over the Houston facility on an underperforming wholesale bakery facility in 2021 and completed an agile transformation in 2022 despite the added challenge of Coronavirus Pandemic and a reduced workforce availability that resulted from it.
❑ Trained and coached the plant manager in Houston on P&L management and expenses control to ensure bakery performance and getting productivity exceeding target in 2022
❑ Planned and executed successfully capital projects in coordination with Corporate Engineering for both bakeries with a budget of $20.5 M
❑ Executed synergies between both bakeries to optimize volume and mix of products, reducing total landed cost
