I am currently working as a Head Chef at Mangwanani African Spa in Sibaya Durban. I have extensive food handling experience in mainly Pastry as well as hot and cold kitchen. I have earned my B-Tech in Consumer Sciences food and nutrition at the Durban University of Technology.
I am confident that I have the skills, creativity and passion to excel in your kitchen. I was working as a pastry chef at the Protea fire and ice hotel by Marriott in umhlanga rigde. My knowledge and experience has grown immensely in pastry, hot and cold kitchen, buffets, ala carte, banqueting, recipe development, menue planning, stock take, receiving stock, Haccp, admin files, etc.
I have kept the sanitation of the kitchen up to standard and trained staff well. As a chef I am passionate about food preparation and willing to always learn new skills and knowledge.
Controlling and guiding Food Production,on the pass approving dishes before they reach customers, training staff on hot and cold kitchen and pastry, creating recipes and menu's, costing of menus, preparing for Audits ensuring its an exceptional Pass, ensuring all food safety and food hygiene practices are taking place correctly, ordering and controlling stock. Ensuring all food temperature checks and sample rententions are taken on a daily basis.
