I m a foodservice supervisor working for the State of Maryland at Baltimore city Juvenile justice center. I have over 25 years in food serve. I currently manage cooks and food serve workers. I schedule employees and assign employees to daily task. I m responsible for completing monthly manual inventory of food items. I m responsible for completing a monlthy operational report using a spreadsheet including food cost, census and purchases. I also prep, cook and serve when needed.
I manage the operation, preparation & production of cooks and food service workers. Instruct cooks on improving methods of meal preparation. Employee scheduling. Maintain accurate records of employee's performance. Perform monthly food cost operational reports.
